How do you view the "ambulance chaser" personal injury lawyer stereotype?

Years ago I was driving to work and, honest mistake, rear-ended the person in front of me. Minimal damage, we filed a police report and drove off, no immediate injuries. She was "in a hurry" so declined medical attention at the scene. I was getting quarterly letters from my insurance, informing me the claim was ongoing. Two years after the accident, I got served! She was represented by the lawyer running ads on the side of every bus in town. My insurance hired a lawyer as well. He told me that (rough #s) my insurance was willing to pay $8K, the plaintiff was asking $120K. They finally settled for something like $20K, just before the deposition!

Is my experience typical? Do the plaintiff's lawyers try to dig up dirt on the defendant during the process too? If you are willing to speculate, what are the odds she was a pain for the adjuster, or trying to use the situation as a cash grab? She was nice enough at the scene and seemed very understanding that accidents happen. I am deeply sorry for my role in the accident but I can't help feeling taken aback by the lawsuit, it stressed me out so much! Sorry for all the questions. Tort law is weirdly interesting.

Was the insurance of the person who hit you responsible for your medical bills or did you have to cover it yourself? US psychiatric inpatient treatment ain't cheap and I'm sure all the specialists are outrageous.
